In the early 80’s the current owner of a a long fallow farm rejuvenated the area to grow wheat and added 8 cows.

Today they have expanded to a herd of 400 cattle of different breeds that produce milk for a variety of cheeses.

And we got a chance to try our hands (literally) at separating the curds and whey and form the stretchy burrata. The results may not have been ready for prime time😏 but the expert showed us how.

Then we toured the grounds and got to enjoy the fruits of their labour.
